Goat Cheese-Olive Sandwiches

Servings: Makes 26 appetizer servings
Ingredients
1 (4.25-ounce) can chopped ripe black olives (about 3/4 cup)
1 (4-ounce) package goat cheese, softened
1 green onion, finely chopped
1 small garlic clove, minced
1/4 teaspoon hot sauce
26 slices Cobblestone Mill bread
1/4 cup chopped fresh parsley

Preparation
  1. Stir together first 5 ingredients in a small bowl until well blended. (The goat cheese mixture can be prepared up to 1 day ahead.)
  2. Cut 2 rounds out of each bread slice using a 11/2-inch round cutter.
  3. Spread olive mixture evenly on 1 side of half of bread rounds, top with remaining bread rounds.
  4. Roll sides in chopped parsley.
  5. Cover and chill 2 hours before serving.
Cooks Notes
When chilling, cover sandwiches with damp paper towels to keep bread moist.
