Summer Salad Sandwiches

Servings: Makes 4 open-faced sandwiches
Ingredients
2 cups cantaloupe cubes
1 cup cooked, chopped chicken
1 tablespoon chopped cilantro
2 tablespoons plain, low fat yogurt
1/4 teaspoon garlic salt
1/8 teaspoon cayenne pepper
2 Cobblestone Mill Bagel
1/4 cup low-fat cream cheese
4 large lettuce leaves

Preparation
  1. Place cubed cantaloupe on paper towels to remove excess liquid.
  2. Mix cantaloupe, chicken, cilantro, yogurt, garlic salt and cayenne pepper.
  3. Split bagels in half. Spread halves with cream cheese.
  4. Top each with 1 lettuce leaf and about 1/4 cup chicken mixture.
