Shrimp-Parmesan Melts

Servings: Makes 4 servings
Ingredients
4 Cobblestone Mill English Muffins, split
1 pound medium shrimp, peeled, deveined
2 teaspoons vegetable oil
1 cup chopped red bell pepper
1/2 cup sliced green onions
4 cloves garlic, minced
2 tablespoons lemon juice
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup shredded Parmesan cheese
Chopped fresh parsley (optional)

Preparation
  1. Place English muffin halves on foil-lined baking sheet. Broil until lightly toasted; set aside.  Cut each shrimp crosswise in half; set aside.
  2. Heat oil in large nonstick skillet over medium-high heat until hot. Add bell pepper. Cook and stir 3 minutes. Add shrimp, green onions and garlic; cook and stir 2 minutes or until shrimp are opaque. Remove from heat; stir in lemon juice, salt and black pepper.
  3. Evenly divide shrimp mixture among toasted English muffin halves; top each with 1 tablespoon cheese. Broil 2 minutes or until cheese melts. Sprinkle with parsley, if desired.
