Wisconsin-Style Beer Brats

Servings: Makes 6 servings
Ingredients
2 bottles (12 ounces each) beer or nonalcoholic beer (not dark)
6 fresh bratwurst (about 1-1/2 pounds total)
1 small onion, chopped
6 Cobblestone Mill Bratwurst Buns
Toppings: Chopped onion, sauerkraut, spicy brown mustard

Preparation
  1. Pour beer into medium saucepan; add bratwurst and small chopped onion. Bring just to a simmer; do not boil to prevent casings from splitting. Simmer, uncovered, 15 minutes, turning brats occasionally to cook evenly. Meanwhile, heat grill to medium heat.
  2. Remove brats from beer mixture; discard beer mixture. Grill brats, covered, 10 minutes or until cooked through (180°F), turning often.
  3. Serve in buns with desired toppings.

Total Time: 40 minutes

Tailgating Tactics: To simmer bratwurst at tailgating site, use a heavy, medium saucepan with an ovenproof handle. Simmer bratwurst in beer mixture as directed over medium to low heat on grill grid. (Or, simmer bratwurst at home, remove from beer mixture and refrigerate in airtight container. Transport to tailgating site in cooler.) Finish cooking on grill as directed.
